Blueberry Apple Crisp
Ingredients
For the fruit filling:
4 medium apples, diced
1½ cups fresh or frozen blueberries
For the crisp topping:
1 cup old-fashioned rolled oats
½ cup white whole-wheat flour
⅓ cup brown sugar or maple sugar
½ tsp cinnamon
¼ tsp salt
4 tbsp avocado oil
2 tbsp maple syrup
Instructions
Preheat the oven to 350°F.
Prepare the filling: Combine the diced apples and blueberries and add to baking dish.
Make the topping: In a bowl, mix the oats, flour, brown sugar or maple sugar, cinnamon, and salt. Add the oil and maple syrup and stir until the mixture becomes crumbly.
Assemble: Sprinkle the oat mixture evenly over the fruit.
Bake for 35–45 minutes, until the fruit is bubbling and the topping is golden brown.
Let it cool for about 10 minutes before serving. It will thicken slightly as it cools.

Tips
Tastes delicious served warm, cold, or even room temperature.
This crisp freezes nicely. Reheat once defrosted to re-crisp the topping.
